Loaded Cajun Fries? I think YES😍


Seasoned fries are a staple (and my go-to) in every sports bar. But anything deep fried isn’t friendly to your gut, so here’s an alternative:
Cut your potatoes into wedges, season generously and pop them into your air fryer.


Loaded with black beans, cashew yogurt, and chives. I use a non-dairy yogurt in place of sour cream for a healthy substitute, but Greek yogurt is another good one if you’re not opposed to dairy.

If you don’t own an air fryer, cook the potatoes in the oven at 425 degrees for 25-30 minutes, or until golden and crispy on the edges. Add a dash, or a lot, of hot sauce and enjoy!


Ingredients

  • 3 medium golden potatoes

  • Cajun seasoning

  • Garlic powder

  • Ground black pepper

  • Neutral flavored oil (optional)

  • 1/2 can black beans, rinsed

  • Non-dairy or Greek yogurt

  • Chives, dill, hot sauce (optional)

Preparation

  1. Cut the potatoes into wedges and submerge in a bowl of cold or room temp water for 15-30 minutes

  2. Drain the water and set potatoes on a clean dish cloth or paper towel to dry

  3. Lightly toss potatoes in oil (recommended for crispier fries, but can omit oil with the air fryer) and season generously

  4. Set air fryer to recommended setting (differs per air fryer) and fry potatoes until golden and crispy. Or, bake the potatoes at 425 degrees for 25-30 minutes until golden.

  5. Top with black beans, yogurt, fresh chives and/or dill, and hot sauce.
