Chocolate Chia Pudding

Ingredients

  • 2 cups plant based milk (I like to use coconut, but any of them will work.)

  • 3 tbsp organic maple syrup

  • 1/2 tsp vanilla extract

  • 2 tbsp cocoa powder

  • 1/2 tsp cinnamon

  • 1/2 cup chia seeds

Preparation

  1. In a medium bowl whisk together milk, vanilla, and maple syrup.

  2. Next add the cinnamon and cocoa powder, one tablespoon at a time to avoid clumps.

  3. Whisk in chia seeds. Mix until well combined.

  4. Cover and refrigerate for at least two hours, or overnight.

  5. Stir well before serving.

  6. Additional toppings: chocolate chips, shredded coconut, strawberries, banana slices, almonds, and dried fruit.
