Simple Smoky Hummus

Ingredients

1 (15-ounce) can chickpeas or 1 1/2 cups cooked chickpeas

  • 1/4 cup fresh lemon juice (1 large lemon)

  • 1/4 cup tahini

  • 2 small garlic cloves, minced

  • 2 tablespoons extra-virgin olive oil, plus more for serving

  • 1/2 teaspoon ground cumin

  • 1/4 teaspoon sea salt

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon onion powder

  • 1/2 teaspoon cayenne 

  • 2 to 3 tablespoons water

Preparation

  1. In a food processor, combine tahini and lemon juice and process for 30 seconds. Scrape down the sides of the bowl and process another 30 seconds.

  2. Next add the olive oil, garlic and seasonings. Process for 30 seconds. Scrape down sides and mix another 30 seconds.

  3. Rinse the chickpeas and add to the food processor. Process for 1 minute. Scrape down sides and process 1-2 more minutes, or until smooth.

  4. If the mix is too thick or sticking to the sides, slowly add 2-3 tablespoons of cold water and process on low for 30 seconds.

  5. Taste and adjust as needed. 

  6. Serve chilled or at room temperature.
